Culinary Cannabis Skills COURSE

Who it’s for: For culinary professionals — cooks, chefs, and caterers — who want to grow in the food and cannabis industries.

Program overview: I created this program to prepare chefs for the fast-growing field of cannabis cuisine. At the Niagara Falls Culinary Institute — part of SUNY Niagara — students gain hands-on experience in safely infusing food with cannabis, mastering precise dosing, flavor pairing, and understanding the science of cannabinoids, terpenes, and decarboxylation.

Classes take place in kitchens, labs, and horticulture facilities. The program leads to the American Culinary Federation’s Specialized Certificate in Culinary Cannabis and can serve as a pathway to further degrees in Culinary Arts or Horticulture.


SUNY NIAGARA Cannabis Conference

Who it’s for: for those who want to expand their knowledge, build connections, and thrive in the cannabis industry.

About: Starting in 2023, SUNY Niagara has been home to the annual SUNY Cannabis Conference — an event I’m proud to host as its main organizer and culinary instructor. 

Each year, this conference brings together students, professionals, and the broader community to advance education, build professional connections, and highlight the many opportunities within the cannabis industry.

We cover a wide range of topics, from medical cannabis research and plant genetics to sustainable cultivation practices and cutting-edge culinary applications. 

One of the highlights is our focus on culinary cannabis innovations, with hands-on sessions, cooking demonstrations, and thoughtfully crafted infused dining experiences at the Niagara Falls Culinary Institute.
